Lebanon: BESTMEDGRAPE research activities shows high potential of grape polyphenols use in the cosmetic and food industries

The research team of Saint-Joseph University of Beirut (USJ), a BESTMEDGRAPE partner, conducted several types of research in collaboration with industrials in synergy with our project.

The first research was conducted on the application of polyphenols in the cosmetic industry, with the collaboration of the local cosmetic industry “Glitt” to incorporate grape seed extract in anti-aging skin products. The stability of the product was tested as well as their antioxidant capacity, and the results showed very promising applications of natural extracts as antiaging active ingredients.

Another collaboration with the local cosmetic industry “Ward Joury” was conducted to incorporate grape seed extract in anti-acne cream. The results showed very promising applications of natural extracts as anti-acne active ingredients.

A second research was conducted by the USJ team on the application of polyphenols in the food industry.

At first, natural grape skin extract was added as a colorant to the burger bun to replace synthetic molecules. Results showed good rheological properties of the dough and high antioxidant activity of the baked burger. Polyphenol addition to bread can be used as a natural colorant while enhancing the bioactive properties of the food.

In a second experience, natural grape skin extract was added as a colorant to salt in an attempt to increase the antioxidant value of the latter. Results showed that polyphenols can be added to salt, to make it more appealing while heightening its antioxidant activity.

As a result, the research activities showed potential applications of polyphenols extracted from grape wastes as a source of natural colorants and antioxidant compounds to be used in cosmetic and food applications.
